Chef stars of Yorkshire inspire future stars of Merseyside
The team from one of the North West of England’s most treasured restaurants, York’s Star Inn the City, returned to Hugh Baird College’s L20 Hotel School last week to work alongside students at their L20 Restaurant.
The team from one of the North West of England’s most treasured restaurants, York’s Star Inn the City, returned to Hugh Baird College’s L20 Hotel School last week to work alongside students at their L20 Restaurant.
Star Inn the City Operations Director Matt Hunter and Head Chef Michael Wilkinson brought a taste of Yorkshire to Merseyside, working alongside students to prepare and serve a delicious five-course menu.
Dishes on the menu included; salt aged duck breast, gin cured salmon with juniper and ginger, Yorkshire pork belly and serrano wrapped fillet with black pudding and grain mustard sausage roll and to finish, a forced rhubarb and Ribblesdale goats cheese cheesecake.
Matt Hunter began his career at Nigel Haworth’s Northcote Manor before being headhunted by Andrew Pern for his Michelin starred Star in Harome restaurant and then opening Pern’s Star Inn the City on the banks of the River Ouse in York. Michael Wilkinson earned his chef whites in the Royal Air Force, catering for squadrons around the world for five years ahead of settling into civilian life in York.
L20 Hotel Student Mason Spencer said:
Working alongside such accomplished chefs has been amazing. They both went out of their way give each of us their advice about the industry and how to progress in it. The menu involved creating dishes that I’ve never worked on before and I gained some really valuable experience from that.
Star Inn the City Operations Director Matt Hunter said:
Working with the College is really important to us. A year on from our first visit to L20 Hotel School and we’ve been welcomed back, we’re really grateful for the opportunity.”
It’s great for us to come and show the students the versatility of some different cuisines to them and it’s fantastic to see how far the students have progressed since our visit last year. We’re already looking forward to next year!
