Professional Cookery and Food and Beverage Service - Level 2

If you want to be a chef or work in the Hospitality and Catering industry, this is the course for you. You will study in our industry standard training kitchens and and your skills will be enhanced with work experience in the L20 Hotel School restaurant. Assessment will take place throughout the course, with your final cookery and pastry test observed by a Chef from a local hotel or restaurant.

The course includes theory studies for cookery and food and drink service. You will be required to do some research in your own time. You will be assessed throughout the course and your final cookery assessment will be carried out with your tutor and a local chef.

The programme also includes studying maths and English towards GCSE grade A*-C (new grading system: 9-4) if you do not already have these grades.

  • Healthy food and special diets
  • Costing
  • Fish cookery
  • Meat cookery
  • Doughs, soups and pastry
  • Food service
  • Menu writing
  • Bar work

What are the entry requirements?

In order to qualify for this course, you will need at least one of the following:

  • 3 GCSEs at grade D (new grading system: 3) or above


  • A relevant Level 1 qualification


  • Industry related experience

Should you not have or not expect to obtain the grades stated above, or not have relevant industry related experience, the College would still welcome your application for this course as this will enable us to identify whether this course is, in fact, the right course for you or whether another course may be more appropriate.

Study Programme

If you are aged 16-19, this qualification will form a substantial part of your study programme. The study programme has been designed to ensure that young people are fully equipped and ready to move on to the world of work or higher level courses. In addition to your main qualification, will you also get the opportunity to undertake relevant and CV bolstering work experience out in your chosen industry. You will also be supported through maths and English qualifications.
